Physicochemical Properties and Biological Activity of Active Films Based on Corn Peptide Incorporated Carboxymethyl Chitosan

Active films based on carboxymethyl chitosan incorporated corn peptide were developed, and the effect of concentration was evaluated. Physicochemical properties films, including thickness, opacity, moisture content, color, mechanical properties, water vapor permeability, oil resistance, measured. Biological activities antioxidant antibacterial activities, characterized in terms 2, 2-diphenyl-1-picrylhydrazyl free radical scavenging activity, reducing power, total filter disc inhibition zone method. The results indicated that incorporation caused interactions between Maillard reaction gave rise to light yellow appearance. Compared with Control, degree glycosylation, browning intensity, tensile strength, activity increased, but elongation, resistance decreased. can potentially be applied food packaging.
